Actually it's not possible to change FOV within the sim: I've always hoped for that setting to appear in the options menu.
Probably there's a way to do it changing a value in the cars' files, but we'll have to wait for more detailed informations.

I am sure at some point in the future this will be a feature. There is some clipping that occurs right now (I am sure you have noticed it on the original carset in cockpit view) and that may be exaggerated depending on the FOV value swing. So the change should be a minimal one, or the original value included in the original download should be the highest fov value and it only goes down from there to keep that clipping at a minimum.
